5 min meals and a grocery list to recreate them

Since arriving in Scotland, I’ve been throwing together super quick, healthy meals that have really hit the spot. Like five minutes max prep time. The only “cooking” I’ve done so far was boiling eggs and potatoes. I boiled them together in one pot for the sake of efficiency, and honestly I recommend it. It’s one less pot to wash.

Read on for a roundup of the ultra convenient meals, desserts, and snacks I’ve eaten in the past week, accompanied by a grocery list to make them. It’s amazing how many things you can quickly whip up from a small roster of ingredients.

Also, some intel on the cost of living in Europe compared to the US (groceries, housing, and beyond). I am amazed.
